You’ve sourced a beautiful bag of single-origin beans. You’ve dialed in your grind size. You’ve even pre-heated your brewer. And yet — the cup still tastes a little off. Flat. Sour. Not quite what you expected.

The culprit might not be your beans or your technique. It might be what’s coming out of your tap.

Water makes up roughly 98% of every cup of coffee you brew. That’s not a rounding error — it means water is your coffee, essentially, with a small but critical addition of dissolved coffee compounds. Yet for most home brewers, water is an afterthought. You fill the kettle, hit brew, and hope for the best.

Understanding water chemistry won’t turn your kitchen into a lab. But a few small adjustments can genuinely transform what ends up in your mug. Here’s what you need to know.


How Mineral Content Affects Coffee Extraction

Minerals dissolved in water don’t just hitchhike along for the ride. They actively participate in brewing chemistry.

Calcium and magnesium, the two most common minerals in tap water, bind to the aromatic and flavor compounds in ground coffee. They essentially act as a bridge between water and the soluble material inside the bean. The more mineral content your water has, the more aggressively it extracts those compounds during brewing.

Here’s where it gets interesting:

  • Too few minerals (like distilled or very soft water): water pulls flavors out too quickly and unevenly, leading to under-extraction — sour, sharp, thin-tasting coffee.
  • Too many minerals (very hard water): extraction becomes incomplete and selective, often pulling bitter compounds while missing desirable acids, leaving the cup muddy and harsh.

The specialty coffee community has largely settled on a target range of 50–150 mg/L total dissolved solids (TDS), with a sweet spot around 75–100 mg/L for most brew methods. That’s enough mineral content to support clean, thorough extraction without pushing things into bitter territory.


Hard Water vs. Soft Water: What’s the Real Difference?

If you’ve ever noticed a white crusty buildup around your kettle’s heating element or inside your espresso machine, you’ve seen hard water at work. Hard water contains elevated levels of calcium and magnesium — in some regions, levels can be dramatically high, especially if your water supply comes from limestone-heavy ground sources.

What hard water does to your coffee:

  • Suppresses bright, fruity, and acidic flavor notes
  • Makes the cup taste dull, heavy, or flat
  • Gradually scales up your gear, reducing heat transfer efficiency in kettles, espresso machines, and boilers

What soft water does to your coffee:

Soft water — water that has had most minerals removed, either naturally or through a water softener — brews coffee that tastes noticeably brighter and cleaner. That sounds like a win, but there’s a catch. Without enough mineral content, the cup can feel thin and lacking body. Some of that satisfying “weight” in a good cup actually comes from the interaction between minerals and extracted coffee compounds.

Most specialty coffee shops and competition baristas aim for balanced water — not stripping, not scaling. Neither extreme is ideal. The goal is water that supports extraction without fighting it.


The Science of Water pH and Coffee Flavor

pH is a measure of acidity versus alkalinity, running from 0 (most acidic) to 14 (most alkaline), with 7 being neutral. For brewing coffee, you want water that sits in a fairly neutral zone — roughly pH 6.5 to 7.5.

Water that’s too acidic (below 6.5) will amplify the naturally occurring acids in coffee, tipping the cup toward sour or sharp flavors. You’ll taste acidity as a flaw rather than as brightness.

Water that’s too alkaline (above 7.5) has the opposite effect. Alkaline water suppresses acidity in the brew, flattening out all those nuanced flavor notes that make a good single-origin coffee interesting. High-alkalinity water can also interfere with extraction, leaving coffee tasting muted and slightly muddy.

Here’s the practical challenge: tap water pH varies significantly by location. Depending on your city’s water treatment process and local geology, your tap could be sitting at 6.8 or 8.2. You genuinely don’t know without testing.

Inexpensive pH strips or digital pH meters are widely available and easy to use. A quick test tells you immediately whether your water’s acidity is working for or against you.


Tap Water vs. Filtered Water: Which Should You Use?

For most people, this is the most actionable question. The short answer: filtered water is almost always better than unfiltered tap, but the right type of filtration depends on what’s actually in your water.

Unfiltered tap water

Tap water is treated with chlorine or chloramine to make it safe to drink — which is essential for public health but detrimental to coffee flavor. Chlorine is aromatic and will mute or distort the delicate flavors in your beans. Beyond chlorine, tap water composition varies wildly. The same brewing recipe can taste completely different in New York versus London versus Singapore because the source water is so different.

Activated carbon filters

Pitcher filters (like a Brita Brita Standard Water Filter Pitcher) and faucet-mounted carbon filters remove chlorine and larger sediment particles effectively. For most home brewers, this single step makes a noticeable improvement in cup clarity. The limitation is that carbon filters don’t adjust mineral content — they’re not designed to soften hard water or remineralize soft water.

Reverse osmosis (RO) systems

RO systems push water through a membrane fine enough to strip out almost everything dissolved in it — including the minerals you actually want. The result is water that’s too pure for good coffee. If you have an RO system at home, you’ll want to remineralize the water before brewing. That sounds more complicated than it actually is (more on this below).

The practical recommendation

For most home brewers, a good pitcher filter or inline carbon filter is the right starting point. It handles chlorine, costs relatively little to maintain, and will visibly improve your cup. If you have very hard water or are chasing more precision, that’s when it’s worth digging deeper into mineral adjustment.


How to Test and Improve Your Brewing Water

You don’t need a chemistry degree. Here are practical tools and approaches that are genuinely worth trying.

Test your water first

A TDS meter TDS meter for water quality testing is a small handheld device that measures total dissolved solids in your water, expressed in mg/L (or ppm — parts per million, which is equivalent). They typically cost $15–30 and take about five seconds to use. Dip the probe, read the number, done.

  • Below 50 mg/L: Your water is very soft. Consider adding minerals or using a specialty water product.
  • 50–150 mg/L: You’re in the target range for most brew methods.
  • Above 200 mg/L: Your water is on the harder side and may benefit from filtering or blending with softer water.

pH strips or a simple digital pH meter can also help you check the acidity level, especially if your tap water is known to be high in alkalinity.

If your water is too hard

A carbon filter pitcher will remove chlorine but won’t address hardness. If your TDS reads above 200 or you’re seeing scaling in your equipment, you have a few options:

  • Use a dedicated water filter designed to reduce hardness (some pitcher systems have specialized cartridges for this)
  • Blend your tap water 50/50 with filtered or bottled water
  • Look into a countertop filter system with a softening cartridge

If your water is too soft

This is the less common problem, but it does happen — especially with RO water or naturally soft municipal water. The fix is straightforward:

A Few Notes From My Own Brewing

When I first started paying attention to water, I was brewing with unfiltered tap that clocked in around 280 mg/L TDS and had a faint chlorine smell. Switching to a simple pitcher filter immediately made the coffee taste less muddy — fewer off-flavors in the finish, more clarity in the top notes.

The good news is that improving your water doesn’t require a big investment. Start with a TDS meter and a pitcher filter. Test what you have now, make one adjustment, and taste the difference. That’s the home barista mindset in a nutshell: small, deliberate changes that compound over time.
